- In blender add coriander and mint leaves,chilli,ginger, cumin powder,chat masala,black salt, and blend it into fine paste, transfer the green chutney into a bowl,add water and mix well,add salty boondi green chutney Pani is ready.
- Heat a pan on medium heat add little water, tamarind pulp, jaggery,black salt,cumin powder, ginger powder,red chilli powder and cook 7-8 minutes.
- In a bowl take semolina and wheat flour mix well, add water and mix well, don't add any more water,make dough of it,cover and let it rest for 10 minutes.
- Knead the dough once more, take small ball out of it and keep rest of the dough covered
- Heat oil in a kadhai,roll out a chapati as thin as possible, after rolling out chapati,make small Puris with the help of cookie cutter or lid
- Deep fry few Puris at a time in to hot oil,press a little,it will puff up and are golden brown in colour from both sides
- Crispy Puris are ready
- Pani Puri is ready to serve
