Their challenge recipe is based on recipes from The Washington Post, Cordon Bleu at Home and Baking Obsession. The fact that the Daring Bakers had announced crackers for the month of July was only a plus. I have been searching for "the cheddar shortbread cracker recipe" that I have experienced at upscale artisanal bakeries, and I just cannot replicate it. I am so excited to be part of the April class of Daring Bakers.
Instructions to make Daring Bakers: Twice baked Mozzarella Cracker:
- Rub the butter in the flours in a bowl until it resembles breadcrumb like.
- Mix the salt, paprika, rosemary, cheese, pepper and water.
- On a baking tray put some foil and drop the mixture on it.
- Press it with fingers as thin as possible and put it in a pre heated 180 degree oven for 20 min.
- After 20 min, take them out and once a little cool to handle, cut in 1/2-1 inch logs and put to bake again for 15 min or until nice and golden brown.
- Serve with soup, dips or add to salads.
My first challenge was a mixture of old and new. I made these today but i dipped them in cherry sauce and then chocolat then grahnm crackers. Snack crackers are made with wheat flour (enriched with niacin and folic acid) and malt syrup, resulting in a delicious buttery taste. I loved the Daring Baker Challenge this month! I haven't been able to participate in the challenges in the past year but I am committed this year!
