- Now heat a flat pan. Take thick size dough for koki. It should be double thick than normal roti. Roll down and criss-cross with a blunt knife.
- Place it on hot pan. Raost it well on both the sides on low flame. Keep applying ghee /oil as desired simultaneously flip the roti so that its cooked evenly from all the sides.
- Serve hot with tea or curd. Sindhi world famous koki can be relished in breakfast with tea or curd or pickle, as well as teatime snacks in the evening.
Strategy: Blend every one of the fixings and make a batter. Besani or Besana ji Koki is a traditional flat bread from the Sindhi Cuisine. Koki is made only from wheat flour while in Besani we add besan (gram flour). You can take the ratio of half and half of both the flours.
